Something Broke Error Running Student Activity Report for Assignment or Assessment

Description:
In a Course restored from a non-SaaS to SaaS environment, the Student Activity Report for some Assessments/Assignments is giving an "Oops! Something broke" error.
Steps to Repeat:
  1. Login to Blackboard Learn
  2. Access Demo Course
  3. Go to Assessment
  4. Click on a content items options and select 'Student Activity'
Observed Behavior:
Notice the error message "Oops! Something broke. Please reload the page"
  1. Edit the content item Options
  2. Check the Display After/Display Until option
  3. Click Submit
  4. Repeat step 4
Observed Behavior:
Now Student Activity Overview page shows data
